These breakfast ideas will help simplify your mornings and ensure that you and your kids are off to a good start. We all know breakfast is the most important meal of the day, and yet quick and simple breakfast ideas are not always the easiest to come by. And if you want those breakfasts to also be relatively healthy? AND ready to grab as you hustle the kids out the door? Well, the challenge gets even harder.
Requirements for my Breakfast Ideas
School is starting sooner than I care to admit, so I decided it would be a good idea to collect some breakfast ideas. However, There were some requirements I had. I wanted the breakfasts to be a good protein source. I wanted them to be prepared in advance and frozen OR ready to be finished quickly the next morning. No one has time to start from scratch every day. Oh – and they needed to be something my kids would eat. Slightly essential. π

Breakfast Idea #1:
Overnight Bagel Casserole
This easy, cheesy overnight bagel casserole from Shaken Together Life looks delish. This is a great balance of healthy fats, protein and carbs for growing kids. I love that it’s an all-in-one dish that can be thrown in the oven and bake while you get ready. Yes, it cooks for 40 minutes, but that’s not a big deal if you get up and pop it in the oven right away. What a great way to send your kids off to school in the morning.
Breakfast Idea #2:
No Bake Energy Bites
Don’t want to cook? No problem! Mess for Less shares her recipe for these yummy No Bake Energy Bites.Β Just a few simple ingredients, 10 minutes to whip them up and you’ve got a quick grab-and-go breakfast solution that happily provides protein, fiber and healthy fats. Stored in the fridge, these last a week (if they last that long). π
Breakfast Idea #3:
Baked Oatmeal Cups
These great little Baked Oatmeal Cups from Making it in the Mountains are a healthy, tasty option for those crazy mornings. Baked ahead of time and stored in the fridge, you can grab them as you’re running out the door (or take a few extra seconds and microwave them so they taste fresh-out-of-the-oven). And you know me – I’d slather mine with a pat of butter.
Breakfast Idea #4:
Pumpkin Cheesecake Muffins
It’s not Fall without some pumpkin-y deliciousness, amIright? These Pumpkin Cheesecake Muffins from Daily DIY Life combine pumpkin and cream cheese for a match made in heaven. Seriously, these look so good, all I would add is a quick batch of scrambled eggs for added protein and voila! Happy tummies all around.
Breakfast Idea #5:
Fluffy Biscuits (with eggs)
Lastly, I would be remiss if I failed to mention my own Fluffy Biscuits – a recipe handed down to me from my sweet Southern Grandma. These biscuits can be whipped up in 10 minutes, covered and refrigerated overnight. Then, the next morning, while you’re pouring your first cup of coffee, you can pop the biscuits in the oven. They take only 10 minutes to bake (depending on your oven). For a protein-based breakfast, I would top these with a quick scrambled egg, a slice of cheese and your choice of ham, pre-cooked sausage patty or pre-cooked bacon. An easy, hot breakfast. Who needs the drive-through when these are so fast and easy?

Sara, the pumpkin cheesecake sounds like a great dessert! But of course I would put donuts in that category as well. Adding protein with the eggs is a great idea and pumpkin is a fruit after all. Great ideas. My kids would have loved to have been at your house for breakfast. I think they usually ate cereal…boring and full of sugar.

Sarah, these are great breakfast options for busy mornings!!! And they look yummy!! I like to make mini quiches-ham or bacon, onion, green pepper, egg….pour into a muffin pan and cook in the oven. Then re heat in the microwave in the morning until they are all gone π
